Niiiiiiiiiiiiiiice! That's an interesting blend of construction styles -- hand-crafted log walls (instead of machined) but with a more conventional roofing system made of engineered trusses. I find the roofing most interesting...
A lot of log homes here in the US have gone to structural, insulated panels (SIPS) over purlins or rafters, or what's called a "built-up" roof where they deck the entire roof with T&G planks, then use 2Xs to frame above that, add the insulation layer beteen the 2Xs, then deck it again with OSB (or plywood) and roof it on top. Looks like your insulation will be installed between the trusses, then the interor ceilings (drywall or something) will be installed below that... I've never seen that method detailed. Please provide more pics as they complete that part of the project!
