Is a land plow and a moldboard plow the same thing? Would this work to dig a trench with most of the material being rolled out of the trench to the side?

I can not answer your name question but can tell you many regions have their own local names for different plows. Here the moldboard is called a "bottom plow".
Depending on what you want in a trench you can use it to dig one. At same time depending on what you are trying to do you can use a rear blade, a subsoiler or a middle buster. It depends on how deep and wide and such you are after.
The moldboard or rear scrape bald with give you wide sloping sides where the middle buster will give sharper sides but probably more depth with single pass and subsoiler is great for pipe like 1 inch in diameter. If you are putting in pipe in the trench you can connect it to the subsoiler and have it pulled into the trench all in one pass. Some will add a larger pipe to it to feed the pipe you are install through it (or wire) but depending on how long the run is you can just connect it directly to the plow and let it pull it as it goes. kt

I have installed an 8 zone sprinkler system in my back yard of about 2 acres with a middle buster and a subsoiler with varying degrees of success. I use the subsoiler to start the trench, break roots, or identify large items which must be dealt with. That works fine and also to pull wire. I have not had great results pulling pipe for several reasons.
Now I am about to add a couple of additional zones to the system and some waterline to new faucets. I have used the middlebuster to make the trench with a 12 and a 14" furrow and now have a small 6" furrow to try. The problem with the middlebuster is a lot of dirt falls back into the trench after you get below a few inches. I am wondering if a different type of plow would roll the dirt out of the trench better.

I consider a land plow a type or moldboard or bottom plow. In our area a land plow is a plow usually with around 8 or more bottoms. This creates a width large enough for the tractor to stay completely on the "land" and not in the furrow. Usually pulled by large ag tractors with duals.
Your looking for a single bottom plow. Most will go about 6-8" deep at max. The dirt is rolled over toward the side and it leaves a furrow/trench as wide as the bottom of the plow, say 12" or so. The resulting trench is kind of wide and shallow for sprinkler line.
