there should be no problem using a standard spool valve (cylinder valve) on a hydraulic PHD. Posthole digger is designed to have optimum torques at low ratation speed. Manufacture will use a motor of much larger displacement than adverstised/suggest flow rate of the pump supply. This produces the same affect as gear reduction, with the slower motor RPM and higher torque not much risk of damage to the outlet shaft of the motor when flow is stopped. If there is any concern regarding shock load at shut off, an external cushion valve can plumbed into serve same purpose as check valves in a motor spool valve.

How many holes do you think you'll be digging?

At first I'll have roughly 200 holes. Later on I'll have some cross fencing which will be at least that amount again. I might just use t-posts for the cross fences though. My local rental yard has a post driver that might be the best solution. Still concerned though how it would perform in the boney soil. Might end up with a bunch of toothpicks.

I use a driver and a auger. Sometimes both in the same fence. The driver will work anywhere the auger will, maybe just slower in hard ground. You can sharpen the posts with a chain saw.

I assume boney means rocky?
