I can find 12 inch augers all day long at the big box stores, and online retailers for around 150-200 dollars a piece, but jumping up 4 more inch's to a 16 inch auger they turn into 450-600 augers. I don't get why there is such a HUGE price jump. The difference between an 8 inch and 12 inch is only 20 or 30 bucks.

I just guessing, but maybe the 12" ones at the big box stores are for the little gas powered units and the larger ones you see are for skid steers and such?

Maybe the 8" and 12" share a common gear box and added metal is the only difference. Jumping to a 16" might require a more HD gear box in addition to added metal. That's the only idea I can come up with.

Bigger augers are used on higher HP tractors & move a lot more dirt.

They have to be made a lot heaver than the smaller augers. That costs more money.

Did you look at Everything Attachments. Their 18" auger is $395 delivered.

But I am only talking about the auger itself, not the whole digger.

that's what I am talking about. I can get a 12 inch auger for 150 all day long from big box stores, but a 16 inch auger is 400 bucks. I don't get that price difference.

18 in my case seems excessive, 14 would be ideal, but 16 seems the next up standard size.

It may be the steel used. Think about the stress on the flutes, going from 12 to 16 inches. The leverage is 2x the 12 if I figured correctly, so they must use a better grade and heavier steel. Steel is not cheap now a days. Take a look at the weight difference between the two. Good steel is running several dollars a pound

Also I believe they make more 12 inch over the 16 inch so production costs would be higher.
