Self-Leveling will actually make the forks MUCH easier to use.
With a traditional loader, as you lift the boom up high to load something off of a truck, for example, you have to constantly tweak the curl to keep the load level on the forks. With self-leveling, the forks will stay at the same angle to the ground when you raise or lower the load.
Without self-leveling, forks can actually be a bit dangerous - you can easily dump heavy stuff back on yourself if you are not careful. For example, if you were to be loading a refrigerator into a truck. I always strap bulky stuff like that onto the pallet or tight against the fork frames before lifting.
On dedicated construction forks like a Lull or something, self-leveling is a given.
