Many but mostly ford diesels or ihc or jds
Has anyone found a mechanical temp gauge that the bulb with actually fit right in the head of these tractors? I know it's a 1/8 NPT every bulb I see at the parts store is way to big. All of them are like 3/8 to 1/2. I wonder if I could buy some fittings to make them work?

Drill & tap the hole to 1/4" 3/8" NPT. Or drill & tap a 3/8 hole in the intake manifold where it covers a water jacket port in the head.

I was thinking that I think cast iron will be ok to do that to

some of them already have a plug in the intake manifold at the back of the engine

Yeah mine definitely does not have the plug. I was thinking about taking a 1/2 or 3/8 x 3" nipple and reducing to and 1/8 NPT 90 screw the bulb in it should be accurate other than it'll be outside the head. I ran it for atleast 30 mins yesterday and the temp never got over 175 on the block I shot it with my temp gauge!

You might as well go without a gauge. Waste of time & money to put the sensor outside the head.
