THis site will tell you how much weigh and the amount of water that your tires will hold based on 75% fill factor. Just scroll down to your tire size and read the info.
By the way I wouldnt recommend filling to less than bottom of the valve stem to prevent the sloshing effect that you would get from a 50% fill. It would continue to slosh up and back when you stop and likely cause the tractor to move a bit back and forth.

RimGaurd is beet juice, may get slushy in extreme cold but doesn't freeze solid.

I can't get Rimguard unfortunately. If I could get some beet juice, I might put it in myself though.
