Our garden was nothing spectacular last year (first year planted, too dry, and I refuse to put domestic water on it) but we used our horse manure pile for fertilizer in lieu of chemical products. All in all it wasn't bad. Some plants seem to really like the HM, cucumbers, carrots and tomatoes in particular. This year we hope to have the soil more worked in and fluffier. We have heavy clay which is less than ideal. I'd recommend a hiller too, it takes the work out of making rows. Come to think of it, I have an old scrap disc harrow that's not doing much at the moment, it might get pressed into use for parts to build a hiller with.
We just tried to weed ours once a week or two at most and keep 'em down to a dull roar. As anyone that's used horse manure for fertilizer can tell you, it's weedy at best. As luck would have it the weeds that grow are distinctive, easily identified and pulled.
