If it was me (and not knowing you local growing conditions) I would grow apples and/or blueberries. Both of them are something you plant once, and enjoy for a long time, and you do not need to rework the soil every year.
If you want to eat the apples, you'll likely need to do some sort of pest-management (i.e. spraying), but its the kind of thing that even if you just want to let the trees grow, apples trees in bloom are quite beautiful. They also attract bears and deere (if you have them around), which depending on your point of view can be a good or bad thing.
(I like to see bears in *other* peoples yards, deer I don't mind at all; we have plenty of both around, and moose, but my dog does a pretty good job of keeping the bears away; he doesn't bother the deere as much for some reason)
