Has anyone put dual rear tire/wheel set-ups on their Yanmars? If so did you use a spacer with bolts and holes mating with the original hub/rim pattern or did you use a j-bolt type setup and pull the tire/rim combo tight against one another? Any pro or con thoughts on this? Thought this might be a way to help stabilize these things a bit more on steep ground.

I got a YM2500 one time that had factory spacers and duals. They were spools that had bolt holes on one side and threaded holes on the other.

I just got my 1500D this week and that is one of the first things that I thought about right away. I was thinking that it might add a little less loading and digging in as the single skinny tires sure tear up everything I run over. But I was also thinking that it might assist with stability. I am scared to death on this thing. I can't find anything anywhere that tells me max roll angle and I don't really wanna find out for myself.

Just wondering what your desired effect is by doubling the wheels?

Here's an old post that describes the dually spools in the Optional Parts chapter of the (American) Yanmar manual.
The post following shows some that an owner had made for him, and then subsequent posts discuss stress. Some excellent design engineers participated in that thread.

Having the spool fabbed up is going to be the only complicated part. Although, it's a pretty simple piece.

I assume they would start with a piece of round stock that was close to the OD of the portion where wheels bolt on, and then turn down the center section?

Or make the end plates and weld them on to a piece of stock the correct OD for the center section? I guess as long as you got it properly centered, that would be ok. May actually make it almost a DIY project for those of us that don't have a lathe but can weld.
