I can tell you what type I use, as for capacity it depends on which chassis(es) you have and if you are also doing the front axle.Also, can either one of you tell me what type of hydraulic fluid the MT2501FD uses and how much(capacity)?

Yeah, there are a couple options in the manual. It's more convenient and easier to buy one fluid. Base call is for API GL-3 or better.
The PowerTran is a Agri rated hydraulic fluid. https://phillips66lubricants.com/product/powertrantm-fluid/
PowerTran Fluid also meets API GL-4 performance requirements.
PowerTran Fluid is recommended for use where the equipment manufacturer specifies:

"PowerTran Fluid is recommended for use where the equipment manufacturer specifies:"Well, their callout for the Jone Deere J14C as Type 303 is totally wrong. J14C came out some 30+ years later vs. 303. Type 303 is banned in over 26 states. Nobody uses 'whale oil' (type 303) oils anymore.
