This is another family favorite we got to like when our daughter lived in New Orleans. Now I make it a couple times a year when we have leftover ham. Dead simple.

Ingredients:
1 lb small white beans, yellow eye beans, etc
1 leftover ham bone and about 1 lb of ham cut up
1 large onion, chopped
1/4 cup green onion, chopped (green part only)
1/4 cup parsley, chopped
1/4 cup pimento pepper, chopped
1/4 cup butter
2 bay leaves

What to do:
Put it all in a big pot, cover with water, cook slowly for about 3 hours until beans get creamy.

Ham is our favorite but I should have mentioned can also use bacon, pork, sausage, shrimp. Or a mix.
