Look for a murphy style switch. I know they make them for low oil pressure.. not sure about the temp.
Another way to do it is to 'T' your oil sender so you can ad another sender. Find one that is grounded with pressure. Use a relay with NO contacts.. or both.. wire power directly to the relay 'hot' side, and then wir ethe relay ground pin to that sender. Wire your power to your fuel solenoid thru the NO contacts on the relay. Install a momentary or toggle bypass switch from the relay ground pin to ground. Hit the bypass to energize the relay and thus your fuel solenoid. Start tractor, and keep thge bypass down untill oil pressure comes up.. when oil is up, you can let go of the bypass switch, as the sender is now providing ground to the relay. When oil pressure goes away, the sender opens, and the fuel solenoid is de-energized.
With a handfull of radio shack parts you should be able to make a water temp shutoff in the same fashion.. perhaps in tanden with the oil shutoff, and using some of the same support components.
