IMO your jeopardizing your health. Do research into leeching of aluminum from pots and pans going into the body. If it is Alum it got tossed years ago in our home.

I want to know more about the PID controller!!

It's a proportional controler that senses the temp and rate of change and makes adjustments on the damper. Looks something like this (the one I use on my bullet casting machine).

The damper itself is an old power window motor that is connected to a stainless 1/4 28tpi all thread that moves a slide back and forth much like the slide on a motorcycle carb.

The smoker is also self starting (So its ready to go by the time I get up). Load with wood the night before and connect battery and propane tank. Uses standard automotive spark plugs and coil with a 12v solenoid for the gas. Once the smoker is up to temp it shuts off.

I have a simple rock fire ring at the farm "picnic grounds"! Sometimes fry up some smoked sausage w/onions peppers & tators or maybe grille some pork steaks or "country style ribs".

Here is a cooker we use on the 4th of July. Doors on both sides so racks can slide either direction, PID controled damper on wood box maintains temp within 3 degrees. Shown here with 4 briskets, 6 chickens, 10#s of sausage, 20#s of squash and zucchini, 60 ears of corn, 60 bake potatoes and 6 loaves of bread.

Now that is one heck of a cooker! It looks more like a smoker, I would not think that it would be suitable for bread? Who does not love fresh bread but how does it not get smokey? I just discovered a meat smoking forum (MSF)and a small smoker is on my build list. I just started poking around there and asking some questions. Another cool (outdoor) thing that I've been reading on are wood fired bread/pizza ovens.

Foil keeps the smoke out.

I do have some forced air wood fed (hard wood only) pellet smokers that you can cook bread and pizzas on with out wrapping them up and they are better than an electric or gas fired oven.

Now from what I've learned, it looks like yours is what is called a reverse flow? For a more even heating.
