I have a weber gas and charcoal kettle, tend to use the Kettle more for 3 season, and the gas in the winter or if I am in a hurry.

I wanted to get a Kamado style grill like the green egg, until I saw the price, even then I would have sprang for it before the weber gas, but the legs or table where also extra... ya just can't get an egg to stand up..

Since then, I have spied this one at lowes for about 1/2 the price of the green egg. Although its still 699.

My father-in-law's cousin made us a grill out of a 33 gallon drum. It has a removable charcoal tray. I built another tray out of angle iron and divided it in a 60-40 so I could build a fire at one end and put meat near the smoke stack and use the grill as a smoker too.

We started, many years ago, with a charcoal hibachi, then our first house had a small natural gas grill at the edge of the patio, when we bought a new house, I had the gas company install the biggest one they had at the time, and included a rotisserie. And I had a charcoal smoker. In this house, we had a big CharBroil propane grill, and a propane smoker, but later gave both to a daughter and her husband. So now we're down to a model 84131 Hamilton Breach 3 burner propane grill but when Sears had a clearance on that model, we got it for less than $100 and I think it might be the best we've ever had.

Been thru a lot of grills. Big ones, little ones, expensive ones, cheap ones. We use ours as part of the kitchen, meaning all meat is cooked on the grill regardless of time of year. I cook way too much to concern myself with gas vs. charcoal and the effect it has on flavor. I don't need every meal tasting like Texas BBQ at its finest and I sure ain't gonna wait for the coals to heat up before I cook something. Life's too short. These days I focus on the quality of the grill, the thought that went into the design, ease of use, ease of cleaning and gas mileage. The one that fits that bill for me is the Weber Q120. I took the Vermont Castings BBQ to the dump some time ago even tho it was a perfectly fine BBQ. Got tired of filling the propane tank every time I turn around.

I am not a griller yet. Have to retire first. We have old propane Weber and I got the Egg knock off last year for my birthday. I grilled only few things in it so far. I did salmon on a cedar plank twice. Interestingly one time while taking our visitors on a tour around our place I forgot that I was responsible for the grilling I made accidentally the best salmon ever. Fortunately the heat was low; the plank burned on the bottom and kind of smoked the fish. Then I tried to replicate it again at another day. Got it close but not as good. I have a lot to learn I suppose. I burn natural charcoal. Cowboy is the brand.

I find charcoal easier to control and better tasting. Light it in a chimney starter and it doesn't take long. I have a 10 year old Char-griller drum style for grilling and smoking. Have rebuilt the charcoal tray on it. Also a Sams-club charcoal with propane lighter. Handy but the adjustable-height charcoal tray is small and light duty. I recently got a Cowboy Grill firepit/grill from Sams. Makes a nice fire pit / weenie roast. Used it once as a grill. Built a good size fire of maple/oak, let it burn down to a bed of coals, then put the grate on and some nice NY strips. It worked wonderful with the wide bed of coals creating a nice even heat. I am a Traeger guy. Traeger is a pellet feed smoker / grill. I can buy a dozen types of wood pellets to fit whatever I am cooking (but hickory is our favorite). It's pricey, the unit I have was close to $700.

No open flames reach the meat. It's more like a oven then grill. The lower the temp - more smoke, the higher the temp - less smoke.

The ONLY thing I don't care for as well on this unit is steaks. I miss the flame kissed flavor. But conversely, my burgers are amazing. Paired with grilled shrimp and squash / zucchini...yum!

Of course, it excels as a smoker. I just smoked a port butt, brisket and ribs last week. All would hold their own in any BBQ competition. And I don't say this lightly as I live in the KC area....we have BBQ here :)

About 15 years ago I saw a small weber on the curb for the trash man. I took it and put new cast iron grates, flavor bars, and a regulator. ($100 total). I have been using it ever since. We use it year round. Since then I have friends who have gone through 2 or 3 of the cheap grills.

I recently bought another larger weber. A little more $$ up front but well worth it in the long run. My free weber has to be close to 25 years old by now and still with the original burners and body.
