If the problem is widespread I have to wonder why I've never heard of processors being sued and/or criminal charges filed against them. The cost is very reasonable to have vets run dna. If dna was taken from animal before turned over to processor,could one not say positively whether packaged meat was or was not from same animal? My experience has been they weigh their thumb,steal a few pounds or both. Those would difficult if not impossible to prove.
I have picked up a pig before and got home to find no bacon. I went back to the packer and was told he “forgot“ to put it in the bags. 😉

I went to pick my pigs up last year and they realized they had given my 1/2 to somebody else. Luckily the person hadn't even gotten home yet, so they were able to intercept and get things straightened out.
A friend used to cut deer in the fall to augment his fledgling catering business. The last fall that he did it, he was dropping them on the floor of the garage which was part of his building, and they wouldn't move sometimes for a week or more. I have always wondered how much spoiled deer meat there was.

Not to worried about the price of ground beef. I'm worried about the price of heating oil and gasoline. $4.95 per gallon for heating oil today. Regular unleaded is $5.71 per gallon.
No need for ground beef if my gas tank is empty and I'm frozen to death.

You know what the funny thing is...unless you do it yourself, there is not a person around that can prove or disprove otherwise.

It's all a honesty and integrity game.
When they charge you for X pounds and you get Y pounds, it's pretty easy to prove.

Also, they finished his pigs in a day and gave him what was labeled as smoked hams and smoked sausages. They had zero taste of smoked anything and were basically raw pork. No one could eat them.

In our county, each kid can only sell one animal per species at the auction. So if they have several pigs in the show, they can sell the others in private deals.
A relative of ours had kids in 4H and always raised their projects, but also raised extra to sell to family and friends. For close to 20 years we'd split a side with my in-laws from that relative. But the last 2 times they took them to the processor, they got a lot less meat than what they should have. We had to go back with them to the processor and ask to see the paper work. The numbers didn't add up. The processor gave us some free meat and apologized.

Fast forward 10 years and our friends that I spoke of before had similar problems with that processor with weight discrepancies and the non-smoked smoked pork.

So, two different families had similar problems with the same processor over about a 7-8 year period. Both families switched processors because of it. Sad.

That is obvious. We were talking about how do you prove, without DNA, that the cow you took in was the same cow you walk out with.

We get a big premium here for grassfed.

Our current processor always wants a new cut order before they get the carcass.

Being I'm pretty well invested in oil and energy stocks. I'm getting some of my money back each time those prices rise

My sons raised lambs and turkeys and each boy took two of each species to the show. They each always sold one lamb and one turkey, leaving us with two of each to process and put in the freezer.
