How do you adjust the mowing height of the mmm for the 3x20 series? Is it a dial like the smaller JD's?

With 7 Iron, the mower is supposed to be adjusted front / back and side / side during the install process. After that there is a Dial on the left side of the tractor for preset height adjustment. When running over a ridge or high spot the whole deck can be lifted a few inches with the hydraulic lift and then returned to the preset mow height.

Yup that is correct.

My 4410 has the same dial. I found out after time the metal tab that rides against the dial weakens and allows the dial to change heights while the deck is raised. Talked to dealer who talked to Deere about the design. Nothing ever came out of it and the twenty series was released. I had hope for a design change that one could fit back to my 4410. The parts pages seems to show the same design.

I took the dial off and replaced with two nuts. I keep a set of wrenches in the toolbox in case I need to change the height or remove the deck. Wasn't happy about this at first but found out I wasn't changing the height that much anyway.

Craig that is a very good point, I noticed that on my former 4310, and it is the same of very similar on my 3520! Can you send pics of your mod. Sounds like a good thing to do with regards to preventative maintenance.
