I have one other question on this topic. If I run a lower flow rate will I lose torque? My understanding is PSI creates torque and flow will affect RPM. The motors run about 10x faster than I need. Can I just reduce the flow from 6.3 to what ever I need and not loose torque? Assuming PSI can be maintained at 2000psi?

You're understanding is correct. You will loose some torque at slower flow rates because efficiency is reduced. 1/10 of rated flow is kind of extreme though. Its always better to run a motor close to its rated rpm. I expect there is a chart somewhere that would tell you what to expect out of that motor with reduced flow.
