Transmission, rear differential, mid-connect box, front differential, front drive hubs all get 80W90 gear oil that's approved for yellow metals.
Hydraulic sump gets AW32 or ISO32 hydraulic fluid
Engine gets 15W40 diesel engine oil
Injection pump gets 15W40 or straight 30W compressor oil
Cooling system should get 50/50 SCA-type anti-freeze
Grease with anything compatible with the calcium based stuff that's already in there.
RK doesn't do any "running in", that's up to the owner. And I'm surprised to hear that they changed the fluids, that's not like them. I suggest that you check those yourself. A proper and complete fluid change involves about 6 gallons of gear oil (front+rear), a couple gallons of hydraulic fluid, all the engine oil, the injection pump oil, the engine oil, and the cooling system. And everything I mentioned should be flushed too. I'll eat my hat if RK did all that.
The consensus is to flush and put in fresh fluids when new, then again at 50 hours. At that point you can start following the maintenance schedules recommended in the owner manuals. This should give you enough keywords now to use the site search engine for specifics.
