Serves 4 average eaters provided you add cheese dip, salsa and chips prior to serving
2 - 8oz. Filet mignon (left over rare works good)
4-6 - slices thick cut bacon (maybe a couple still on fliers)
1 - large onion
1 - large red pepper
1 - large green pepper
1 - jalapeño pepper (or more to taste)
Sour cream
Your favorite salsa
Mexican cheese mix - shredded
Shredded lettuce
Soft taco shells of your choice
+ add more peppers, onions if too meaty for you
Slice all peppers and grill in butter, set to side
Grill onions to your degree of done and set aside
Fry/grill bacon to almost done (this too will vary with taste)
Cut bacon into small pieces
Slice filets into strips, place in pan with bacon pieces, peppers - heat as desired, add peppers and get all hot
Remove, add grilled onions, mix in and serve
Created this gem after having a couple missing from a grill out night - turned out so well we now might throw an extra filet on the grill from time to time
