The sole producer of new Disc Plows for compact tractors is Monroe Tufline: TDP2 Series 2 & 3 Blade Disc Plows | Tufline
Based on my Disc Harrow experience I presume a Tufline 28" diameter Disc Plow could penetrate around 12" deep. A 28" three-disc plow would likely task your Oliver pretty good, assuming the Oliver is 4-WD.
If a Baker plow could penetrate 36" it would require discs approximately 80" in diameter. I do not see 80" discs in U-tube videos.
I was employed in the wine industry in California. Before planting new vineyards the soil was ripped with contract employed very heavy Cat bulldozers pulling multi-tine rippers, or a single 9' tooth if we desired to fracture soft rock deep. Grapes are a perennial crop.
