Buckwheat Pancakes

The main brand available is called Bob's Red Mill. I get it at the local grocery in Mendocino CA. In Virginia used to get it at Wegman's in Fredericksburg.

They can be tricky to make compared to wheat flour pancakes no doubt why they are hard to find. But once you figure it out, easy.

Appreciate the recipe, all we can find is 'Aunt Jemimas' (sure I didn't spell that properly) mix or buckwheat flour in the health food isle, I have tried making them but not the way you describe, mine were not very good so will try your recipe and try again.
Do you let the batter stand like we do for ordinary flour pancakes?
We add a drop of olive oil or melted butter to pancake mix on the others and the pre mix I described also called for the addition of melted butter.
When you cook on the griddle is there a cooking medium or just goes straight on?

I was introduced to buckwheat pancakes in the UK, we lived in Norfolk on the East Coast and were close to a USAF airbase Sculthorpe, we made many friends and often went to the base and were offered all of these wildly exotic foods we had never heard of, I had never heard of a grape popsicle and the other things are a dim distant memory, some were good some I didn't like, we had never heard of buttered popcorn and that is one we still do today, much nicer than the sugra coated stuff we got, but I digress.

I've travelled a lot thru the military. I've experienced exotic foods. Some I could swallow, some I could not.

One of the best surprises I ever got was roasted snails in a bag like popcorn from a street vendor in Seoul Korea.

One of the worst surprises I ever got was raw oysters on a half shell in a river bar in Savannah Georgia. I held it down but not without struggle.....

I use a bit of butter on the electric griddle. I don't add melted butter or oil to the batter but it can't hurt to do that. I do not let the batter stand, put it on the heated griddle as soon as it is mixed. Cheers!

Witchety grubs around a campfire, took several beers to muster the courage and HP sauce to help them down, they tell me they taste good, I didn't chew, just swallowed them whole so I don't know.
