Safety pants won't work with a hydraulic saw because a hydraulic motor has way too much torque. The pants can jam the drive sprocket and stall out a small gas engine, but the same won't occur with hydraulics. Those pants don't work so well with electric saws either. They don't stall out, they just keep on pulling.

Harbor freight used to sell a small PTO generator. You could get one and then run an electric saw. That would be a bit simpler than the hydraulic option and gives you a generator if the power goes out.

Hydraulic saws stop instantly when the trigger is released, but with the reaction time you probably won't prevent an injury.
