I had posted the following in the X-Mass dinner..story thread:
Our Christmas Dinner tradition has been the usual; turkey, ham, mashed potatoes, stuffing, gravy, rolls, sweet potatoes, green beans, cranberry sauce, a couple of kinds of salads, pumpkin pie, and pecan pie.
This year I decided to add a marinade injected, smoked pork loin and a marinade injected, smoked beef roast, and my wife baked a cake. Some family members also brought an apple pie, an assortment of homemade cookies, and a different kind of "strawberry shortcake" like my mother used to make when we were kids. To make that, you bake 3 plain pie crusts or shells and let them cool. Then you put a pie crust on a plate, add strawberries, then real whipped cream, set the second pie crust on that, add a second layer of strawberries and whipped cream, then the same with the third pie crust. DELICIOUS!!!
Take an ordinary ham and cook it in a closed pan with a quart of beer and brown sugar mixed.
Marlowe, when you said a "closed pan", you do just mean with a lid, not a sealed pan, don't you. My wife used to fix a beef roast to which she added a can of beer, but I once tried a beef roast in the pressure cooker with a can of beer, and it was terrible. You know usually when you cook with beer or wine, the alcohol evaporates, but I didn't think about the fact that in the pressure cooker it had nowhere to go, so it was not a good flavor. But your wife's recipe sounds great.
