Is there a chart or something that tells me what metals can and cannot be next to each other?

I think Galvanized and Copper are a no no but what about regular steel and copper?

Love any insight anyone has.

Look for

Anodic index table

Here's one:
Galvanic corrosion - Wikipedia

"For normal environments, such as storage in warehouses or non-temperature and humidity controlled environments, there should not be more than 0.25 V difference in the anodic index. For controlled environments, in which temperature and humidity are controlled, 0.50 V can be tolerated. For harsh environments, such as outdoors, high humidity, and salt environments, there should be not more than 0.15 V difference in the anodic index."

Copper and steel have a difference of 0.50V

Some stainless steel has a difference of 0.15V

The closer the metals on the list, the less corrosion

If you can manage to figure out how to weld them together,, Hmmmmmm???

If corrosion is a concern,, simply protect both metals after joining,,, paint them,,, corrosion becomes a non-issue.

Corrosion is an issue,, only if the metal can corrode.

If you want to join copper to steel, braze them, silver solder them,,, then paint.
Welding is a difficult choice only because of the thermal conductivity of the copper.

Galvanize is simply a zinc coating on steel,,, like paint,
if you try to weld galvanized steel, the first thing that happens is the zinc coating burns away,,,
you are left with,,, wait for it,,, steel.

Joining two materials together is like making a battery,,, like the battery in your car.
If you insulate the materials after joining, like painting them,,, it is like having a disconnected battery,
nothing happens.
