I think that is a great idea. I know a lady that does that and she actually pulls several pens with open bottom in tandem. They all are tied together and she pulls them here and there on the pasture. It is a win -win situation.
Dont know about the answer to the first question...guess youll have to give it a go and report back.
Was thinking about doing exactly what your lady friend is doing. Its a great setup and if you plant the field w/ a high quality forage there's little need for supplimental feed. Im sure many joined houses could be pulled up/down the field w/ very little effort. Certainly the initial/ongoing equipment cost is small compared to a conventional poultry operation. OTOH you likely won't be running as many chicks as they do either. I figure the best market is the organic/natural eggs/meat market where prices & profit margins can be higher. Even for your own consumption its a great deal.
FWIW I like Buff Orpingtons for eggs/meat. They're very gentle & quiet (and pleasant to look at as well) and wind up pretty big by the time they 'retire' from laying.
