My 3 point hitch worked fine but was slow in the winter, i had never changed the fluid before
so I drained the old out. It looked pretty bad, actually syphoned out the old because I couldn't
get the drain plug out, refilled it with TSC premium Trans-Hydraulic fluid. Now the 3 point hitch
goes up slow like I would experience in the winter. I also used the same fluid in all 3 chambers.
Should I change to a different Wt. or kind on fluid?

I'm not sure your problem is the fluid. That tractor has a weak hydraulic system in the first place if I understand what I'm reading: TractorData.com Ford 941 tractor information I'd check for any filters or screens slowing fluid flow. I don't think the fluid is the issue. If the old fluid looked pretty bad your screen is probably clogged. Beware, removing the screen (if there is one) will probably release all the hydraulic fluid, too. (Don't ask.)

I have a ford 851. My fluid is so bad that it froze one winter and i couldnt move the tractor. It would just stall out. My hudraulics work prety quick still.

Check the filter...if there even is one. Theres also abbleeder port on the pump. Its an allen on mine.
