I have read these engines are rated at 2700 RPM (or at least the case for my 373's engine)

My thorottle stop screw, which has an anti-tamper wire on it allows the engine to rev up to 3000, but it is missing and cutting out almost like a fuel cut rev limiter. Runs great up to 2700 rpm.

2700 is kind of low in my mind, my 3 cylinder yanmars run 3200-3400.

Is it typical that the rpm cuts out above 2700? What can I do to raise it?

There is a screw/jam nut with a cap on the access panel on the side of the injection pump, what does that do?

I do currently get some diesel smoke on acceleration, which I'm fine with (and actually like).

According to the tach my Mits 1450 runs around 2900. It is the grey version of yours.

Its odd because mine starts "missing" right after 2700, but the high speed stop screw on the pump that would stop the arm that the lever attaches to is at around 3000. That stop skrew bolt is safety wired with a blob of metal with the Mitsubishi stamp on it so I'm sure it has not been adjusted.

There is a big plug with a hex in it on the side of the governor, wonder what is behind it? Afraid if I take it out some spring or something might go shooting across the shop...

I don't know, never tinkered with the pump. I know enough about them to leave them alone.
