Grilled Chicken with Raspberry Chipotle Barbecue Sauce
This is dead easy and one of our favorites.
Sauce:
1 bag of frozen raspberries or fresh equivalent in season
5 canned chipotle peppers with some of the sauce
4 green onions, chopped, both green and white parts
1 tablespoon apple cider vinegar
1 tablespoon fresh lime juice
salt
Preparation:
Put everything in the food processor and chop for a minute or less.
Chicken:
2-3 lbs chicken thighs
Put them in a glass dish, cover with the sauce. Marinade for 30-60 minutes.
Then put on the grill. That's it.
