I've a great great morning smoking a turkey and pulling the grandchildren around on a hayride behind a bota.

Now -> going carve up the turkey and ham.
It don't get no better.

We just sat down to a delicious 28 lb. turkey that took about 6 hours in the oven...

How long does it take to "smoke" the bird... that had to take a while.../w3tcompact/icons/smile.gif

It was a 14 lb turkey.
Into the electric smoker at 5:45 am.
DO NOT OPEN.
It was ready to take out and carve at 11:20
It was excellent.
Used water soaked hickory chips, a little Dale's sauce and 5 oranges in the steam water, based with half cup of pure honey with a touch of pure olive oil blended .. and top with lots a black pepper.

Feeds approx. 20 folks.


You should figure on 2.75 hr per lb.
Then open and check deep meat temp. You want 375 degrees down in the drumstick joint.

If the bird is done .. but things are not quite ready at thr serving table... unplug the smoker .. and re-install thelid...
You can keep the bird hot another 45 minutes - easy.

If not, close lid quckly and smoke'm some more.

It is fun cooking.

I was thinking like a small "smokehouse" that would take awhile, so is it like a combo smoker/pressure cooker?

We had no room left on the sides to push our 28 lb. bird to fit in the oven.../w3tcompact/icons/blush.gif

Many, many years ago, while cooking a turkey, ...halfway cooked, I opened the oven door and told my wife I had to turn the turkey over... She asked me if I was drinking or something and chuckled... I explained that's the way my grandmother cooked turkey...

Well, my wife got on the phone and called Grandma, and they both were on the floor laughing hysterically... somewhere along the line... I must of gotten my wires crossed.../w3tcompact/icons/shocked.gif/w3tcompact/icons/laugh.gif

You know how women are...even yesterday my wife asked if I turned the turkey over.../w3tcompact/icons/wink.gif

Oh me...
Now that kinda math will indeed get you a well done bird.
If you can find it in the bottom of the smoker in a thousand pieces.

Well, Scruffy... you better forget my lb per hr... and just cookit ALL Morning and eat the gobbler for lunch.

Steve, that would work out about right on the money if you figured 1hr cooking per 2.75 lbs of bird...which would equal 5 hours 9 minutes...figure a tad longer to bring to the proper temperature, and you are in the turkey!
