According to my owners' manual the mid mount PTO is supposed to turn at 2000 RPM. How do I confirm this?

Doesn't your tachometer have a "PTO" marking on it? That would be for 540 rpm on the rear and (normally) 1,000 on the front. Yours apparently is 2,000.

Your 1025's front PTO spins at 2000 rpm as does most other CUT's

Laser tach.... I use them all the time at work to measure fan speeds in PC's. Work great. We use a Monarch. It is nice, because for accuracy work it can be NIST and 9001 calibrated. I typically measure anything from 1rpm-3000rpm.

A web search for "Laser Tachometer" shows cheap ones for $16 to $50
Amazon.com: digital laser tachometer

Thanks people. I never thought of those.

I just ordered one.

Normally the PTO is a fixed speed that tracks with the engine RPM. The PTO rated speed is usually at the MAX engine RPM. On newer tractors that is at wide open throttle. I don't run mine that fast very often.

When my tack comes (ordered) then I will confirm that the mid PTO is revving the 2000 rpm it is supposed to. My snowblower isn't throwing the snow as far as I think it should. At 2600rpm dry powder snow is only going about 12'. I don't think it is the fault of the PTO, but I need to start somewhere and that is as good a place as any to start and the cheapest.
Next option is to change the gearing in the transmission at the front of the mount. That will co$t me anywhere from $500.oo - $1,000.oo

I bought my laser tach very cheaply on E-Bay, from China! Works great! I see tht some have both a laser and physical contact point.
