I'd work with your county ag agent, run some soil tests (cheap), determine your needs, and then amend the soil and plant as your agent advises. The agent will also provide good advise on soil errosion issues if that is a factor in your neck of the woods/fields.
I converted 10 - 15 acres that had been in corn (silage) to hayland (the deer won). The soil is clayey, doesn't drain real well and of low pH. A premium hay like alfalfa was out. So I disked the stalks into the soil, and seeded with a local mix. Mostly timothy, and some red and white clover (if i remember correctly). I borrowed the speader from the Southern States where I got the seed and a home made harrow from a neighbor to cover the seed. Not much to it.
