Can anyone identify these leaves? I have them growing everywhere on the forest floor. I'm located in NE Texas, if that helps narrow it down.

May Apples (at least in these parts...)

Easy now, could be Goldenseal. Or definitely Mayapples. We have both here, very similar. If you have Mayapples the flowers and fruit will come off the side of the stem under the leaf. Goldenseal will be on top of the leaf.

I wish I had those Mayapples instead of all this garlic stuff.

You can make mayapple jelly from the fruit... just don't eat any of the stems, leaves, skin of the fruit, or seeds of the fruit as its poisonous.... but you can make mayapple jelly from the fruit...

I'll think I'll just play it safe and run a bush hog over 'em.

Why? They look nice and provide some cover for smaller animals. We used to find box turtles under ours as a kid. They die down towards the end of July around here.

I use the may apples as a guide to tell me when to start mushroom hunting. No may apples up is too early. Once the may apples get near full height, bout knee high, its time to search for the ever elusive morels
