M7040 hyd. shuttle 2007 4x4 fluid questions

I did my first 50 hr. service and have a few questions.I live in tennessee and due to the overall mild temps. the dealer told me to use udt for the tranny and lift and kubota sae 30 for the engine which is in the manual as one of the options, now after doing the service I am second quessing myself and wondering if I should have used sudt and 15-40 oil. The second thing I have a question on is how to read the oil level on the engine dipstick(and I am fairly mechanical) it looks different in the manual, the first line looks close to the bottom in the picture and the second about a half inch up but the actual dipstick the first line is about a half inch from the bottom and the next line is about an inch above that with letters and numbers inbetween. The only reason I question this is because I put 11.6 quarts in like the manual says and it still was about 1.5 quarts low. The last thing was after the change is when I crank it up about 3-5 seconds later it makes a short barking noise not real loud but I do not remember it doing it before, and I have put about 10 hrs on it since the change it sounds like it could be a hydraulic valve or something but all I did was drain the fluid changed the filters and refilled and cranked and let idle for several minutes before using, What fluids come in these tractors from the factory or are they put in at the dealer.
