I finally found the recipe for the Maple beer. I was slightly mistaken as to the alcohol content, it is around 8.5%.

Makes about 5 gallons.
O.G. 1.084
F.G. 1.016-1.018

Ingedients
9.25 lb. Wheat DME
1/2 lb. maple syrup and 1/3 cup for priming
2 oz. Willamette hops
1 tsp. irish moss
Yeast
1st choice Wyeast's 3056 Bavarian wheat yeast.
2nd choice Wyeast,s 3944 White beer yeast
1/2 cup corn sugar for priming

Boil water(at least 2.5 gal to start, I boil 5 gallons I use a 15 gallon keg as a brew pot),
add DME, 1/2 lb maple syrup, 1 1/2 oz. of hops
boil for 45 minutes then add
last 1/2 oz. of hops, and irish moss
boil another 15 minutes
add water to make 5 gallons
cool to under 80 deg. F
put in primary fermenter and pitch yeast
let ferment for 4-5 days at 68 to 72 deg. F, or until it slows down,
rack into secondary fermenter, let ferment aprox same as primary
prime with 1/2 cup of corn sugar and 1/3 cup of maple syrup, then bottle.
Should be ready to drink after a week in the bottles.

I would recomend using a sterilized hose from the airlock port on the fementer, into a bucket of sanitizer as the airlock. The normal airlocks tend to clog up and if you are using a 6 gal plastic bucket fermenter it will blow the lid off with a loud bang, spraying the sort all over the place.

You can also substitute 1/2 cup of wheat DME instead of the corn sugar, it gives a better flavor and a nicer head.

Thanks. Interesting sounding recipe. I've never used either of those two yeasts. Do they give the ester flavors of the Hefeweizens? When I've made wheat beers I have used yeast I cultured from Red Hook Hefeweizen because I didn't want the estery taste. With this recipe, however, it might fit nicely. Turns out I may have a local source for some maple syrup. Fellow at work taps several sugar maples and send the sap up north to be processed. Now all I have to do is a little archaeological dig in the basement to find my brewing equipment and then order some ingredients.

I've never used the Hefeweizens, so I'm not sure. The beer has a nice smooth taste, with a slight nutty flavor from the maple. You can feel the warmth of the alcohol as it goes down. It is one of my favorites.
