Here is another of Byron Bills recipes; wish I knew what happened to him and his site.
It's a great breakfast for a bunch of hungry adult leaders on a Boy Scout campout :D

I have used this recipe as a reference, and embellished. Here are some variations I have done:
- More garlic
- Less bell pepper(I don't like bell pepper...)
- Ore-Ida or similar frozen has browns instead of fresh dice potato(easier in busy camp)
- Mix Jack, pepper jack cheese cheese instead of just cheddar
- Jimmy Dean spicy breakfast sausage instead of bacon
- 1/2-1/2 bacon and Jimmy Dean spicy sausage
- Homemade chorizo instead of bacon

Mountain Man Breakfast
1 lb.bacon
10-12 medium potatoes; sliced
2 medium yellow onions; diced
12 eggs; beaten
1 1/2 cups fresh mushrooms; sliced
salt and pepper to taste
1 green bell pepper; diced
3 cups grated Cheddar cheese
3 cloves garlic; minced
picante sauce

Heat a 12" Dutch oven using 18-20 briquettes bottom until hot. Cut bacon into 1 inch slices. Add to Dutch oven and fry until brown. Add onion, mushrooms, bell pepper and saute until onions are translucent. Add potatoes and season with salt and pepper. Cover and bake using 8 briquettes bottom and 14-16 briquettes top for 30 minutes. Season eggs with salt and pepper then pour eggs over top of potatoes. Cover and bake another 20 minutes. Stir gently every 5 minutes. When eggs are done, cover top with cheese and replace lid. Let stand until cheese is melted.

Serve topped with picante sauce.

Been making that for 17 years since I got my first DO. It's a family favorite when camping!!

I make a pretty mean lasagna for supper too!

My favorite meal when out hunting. The back straps out of a freshly killed Caribou, lightly fried in real butter. Scrambled eggs, toast, coffee. And if you remembered to bring it - home made high bush cranberry jelly.

I use similar variations as RobertN listed. Most times I use sausage, browned really well and then add the onions and peppers. When they are done I remove all except the grease left behind and add the potatoes. I leave them brown and turn once to brown the other side like hash browns. They end up being mixed though since they're difficult to turn in the deep DO, but that doesn't matter. Once browned I add the sausage, onions, and peppers back on top, then pour the eggs over that and let them cook till almost done, and cover the top with lots of cheese and let it melt. It ends up with a thick layer of potatoes on the bottom since it's not stirred.
