KFC and chook should never be used in the same sentence, vile greasy over salted crud and their 'chips' are adulterated with that awful MSG laden chook salt.

... yet, now I have a craving pang for a Zinger burger. :licking: Ta for that.

Fortunately the closest KFC is 2 hours away in Launceston.

Just curious. As one from "Upover" as opposed to "Downunder," I can't defend KFC's products as exemplifying "Southern fried chicken" as prepared at homes in the US South.

How do you folks prepare fried chicken in the "real South"?:)

Most chicken is BBQ, grilled or roast, I don't know of many people who fry chicken and we don't.
Sorry, can't really help you but for BBQ it is thrown on as is or marinated, that is a whole new can of worms to open but we have two favourites:
One whole chicken split, marinate overnight with olive oil, lemon juice, fresh garlic, fresh rosemary, a little dijon mustard and chopped fresh birds eye chilli.
Place on grill skin side down for about 15-20 minutes then turn over and repeat, remove and serve with salad (anotther can of worms).

Strips of chicken breast fillet marinated in tandoori paste and fresh yoghurt for about one hour, place on grill on skewers and turn as cooked.
Serve on bed of rocket (aragula) and drizzle with a mixture of dressing made of lemon juice, green mango chutney and olive oil.

Both are very popular at Casa De Bunyip.

Most chicken outlets have charcoal chicken done on a rotisserie and only KFC and a couple of others fry chicken.

If interested in southern chicken, check out Garden and Gun. Its an upscale magazine dedicated to "the soul of the new south." They have lots of recipes for fried chicken as well as other preparations. Good articles on guns, hunting dogs, music, bourbon, etc. They did an article on best chicken in every southern state. In the course of their evaluation, they made a special category for best gas station chicken -- Royal Farms was the easy winner [and I agree].
