A friend of us smoked all the sausages and hams for us last year, but this year after we saw how much meat we have, I decided that is too much work for him to do it, so I built a smoker myself. Here is the result; quite happy to see that is working and hope my neighbors will not complain.
It's a cold smoker style with a smoke generator outside the box. I connect the venturi tube to my compresor and with one load, the smoker runs for around 1.5 hours.:cool2:

That's a good looking rig. Years ago my Dad made a smoker out of an old refrigerator and used a hot plate with a pan of chips in the bottom where the motor was originally and drilled holes to let the smoke up into the unit..Of course in those days the refrigerators didn't have any plastic in them. Your rig looks more efficient.

That is project I intend to pursue when I retire in the next couple of years. When we butcher at the next door neighbors he uses his great grandfather's original smokehouse to do the sausage we stuff. In the past we have had the hams done at a local butcher shop. I do the bacons in my trusty little Masterbuilt propane smoker, but I want a smokehouse of my own.

Can you tell us more about the smoke source, and how the compressor figures in? Looks pretty cool!!

Here is a good video with some graphics to see how a smoke generator using Venturi effect works. Instead of aquarium pump I hook up my compressor with pressure adjusted to minimum. I used 1/2" copper pipe for outlet and 1/4" tube for air inlet.

Very cool! I've been looking at smokers alot lately. Not sure if I'll build or buy yet. Are you worried about the glues and chemicals from the plywood getting into the food? Might not be a factor with cold smoke. Is it lined with tinfoil or anything? If I build that style I'll probably do tongue and groove pine boards with SS screws. Maybe being over cautious. Dunno.
