Wow, that's quite a project you're taking on... nothing "simplicity" about it though... You'll be money and asprin ahead to just buy one...

Caeb Hay Baler
Bale hay with your walking tractor? Yes it is true, round bales 22" in diameter 20" long weighing some 48 lbs. are produced and wrapped in net by this small baler. Powered from behind by a 12 Hp walking Tractor it can produce a bale in less than a minute each. It's steerable wheels allows it to maneuver easily and its small size lets it work in confined spaces and on steep found. The netting allows even short and crumbly vegetable matter to be harvested. Its price is $7,100.00 Walking Tractors

If this is the one you interested in it is a "round baler" so no knotter is needed, jsut some method to feed a string in to the system or a netting.

If you were intent on the square baler, use the spacers and hand tie it like the old hay press

The Original Mini Hay Press
do a search for hay press or hay baler on Google patents, you may get some ideas

Ditto that, even our oldest (most simple) balers growing up were a mechanical nightmare when it came to the knotter portion. The rest of the baler was just a big plunger that rammed the straw/hay into the tunnel but the knotter was a mess of gears and slip plates, the string fingers and the needles to feed the string through the bales. If the baler sat over winter, even a bit of rust on the slip plates caused a lot of missed ties until they were shined up again.
You might be better off finding the back end of a baler in some scrap yard if you are set on making your own.

Lets see a picture of your old baler. or at least tell us what it is. You might be surprized how easy it is to get IT running again. Then make changes to reduce its size and complexity. You could install the knotter(s) in any cage, feed them with a linear needle mechanism (instead of the traditional rotary type) and manually trip it when you want a bale made. I put a video on YouTube showing a knotter drive rolling out in reduced speed. Start sketching it out !

It doesn't, the string just gets wrapped round and round and round many times..
