We've never made the Red Beans and Rice ourselves, but I've sure enjoyed it a couple of times in New Orleans. Just might have to try your recipe if I can find the right ingredients.

We have an ethnic market close. What type of rice do you recommend?

What we have generally had in New Orleans is long grain white rice. And that is what we make it with. The main thing is to avoid the fast cooking types, just plain old long grain white rice is what is needed. Long grain cooks up fluffy vs short grain that gets mushy. And get fresh stock, it can get stale.
