So the wife and I are considering building an outdoor kitchen/cover over the current grilling space. In Central TX, we can usually grill almost all year around, but it would be nice to have some permanent sun/rain protection as well as some protection against the winds out of the North in the winter.

One concern we have with building a solid cover over the grilling area is the smoke/grease build up on the underside of the roof (which would be metal or cedar).

Those of you that have cover grilling spaces, is this a problem? If so, how do you handle it?

All I can offer as a "thank you" for any advice is that you will get pictures of the project once we start building.:cool2:

We have a gazebo type structure and the roof is about 6' from the top of the grill. We smoke, can and grill in it without issue of wood stains or grease marks. After smoking, it smells, well, like smoke for a few days. If you are worried, a simple box fan and furnace filter will take care of most of it.

My grill sits out from under the roof of my porch, but in a shady area in the evening. I have several clients who have grills under covered roofs with issues caused by their grills. The worse is a metal roof that is rusting where the heat and smoke have damaged the undercoating of the paint. The top still looks fine, but in my opinion, if they kept grilling there almost every day, like they do, it will fail too. In that case, I added exhaust pipe to their grill that angled out and up above the roof to get it away from the ceiling. At house with wood, there is varying degrees of darkening. It doesn't scrape off like soot, but it doesn't look like it's burnt either. Neither required replacing any wood, but it was obvious that damage was being done and would only get worses with use and time.

In my opinion, it really depends on how often you grill and how high up your roof is above the grill.
