Peppers, I half them, clean out and put them in zipper bags and freeze. A friend of mine, freezes them whole.

Tomatoes, I peel them and then either can them or put in zipper bags and freeze.

I don't want to have to peel them later, so I do it first...

We are experimenting this year... roasted some and cooked some down as usual then froze, but we did throw a bunch in the freezer raw this afternoon. They look great and hard as a rock after a couple hours. Time will tell if we did wrong. Wouldn't of done it but pressed for time. Heading out for a week+ away so we gambled on the quick freeze.

I have been thinking about food storage for quite a while, and see that one of the major reasons 'home frozen' foods don't tend to thaw with the same structure and taste is because of the slowness of home freezing. This was 'cured' by the founder of Birdseye food (I believe it was him) when he developed blast freezing.

Are there any USEFUL home sized blast freezers available?

I've also thought about just dropping vegetables in liquid nitrogen in order to freeze then put them in a regular freezer. Has anyone tried doing this before?

I can build a homemade liquid nitrogen generator for about $1000 (it appears) or buy one for a little more. I don't know whether I could produce enough in order to freeze a 'winters worth' of fresh tomatoes, but it makes me wonder.

I am wondering how good they would be stored in a shed with 2x6 walls and no insulation. Our temps regularly get down to -20 to -40F during winter.
I know of an old guy that stored his in an unheated barn in their own dirt. They were the purple potatoes.

You may end up with sweet potatoes.
