Yes, it would work great. The house we just built we used all pvc lumber for the trim, didn't want to deal with outside maintenance. you can use bondo to fill the holes in. We actually just used nails to attach them to the house and pvc biscuits to join the trim corners together around the windows.

I am NOT a fan of PVC for anything in the way of construction outdoors except for gutters and garage door weatherseals, have seen too many places on other houses where it splits and cracks after a short time. It's also much too expensive. What's wrong with using a treated board covered with aluminum trim? That's all I ever install for a situation when exterior wood might get wet, and there is almost no problem with expansion.
