Let's see your recipes for low salt and low fat dishes.

These are subjective definitions since some of us can have or choose to have more salt or fat than others. I'm thinking low salt for me means a daily limit of 1200 to 1500 mg and total fat a few grams. That's for me but others have higher limits so post what you have that is lower salt and lower fat by your definition. For a less restriced person, their salt content might be up to 2300 mg per day and fat content of maybe even 12 to 50 grams per day. So I guess we'll get some recipes that are low salt and fat and some that are ultra low salt and fat. Relax, we'll sort it out.

Photos of the dish being prepared would be nice as would some sort of salt and/or fat content guestimate. We're not talking FDA here, just ballpark guesses. Plus, we can make anything without salt or fat but to make it tasty is another matter. So this is not as easy as it seems.

Start thinking now and as dishes come to mind, post what you have with photos if possible. We'll take what you have. Tomorrow, I'll make and post my spagetti marinara sause with whole grain macaroni (pasta) that is really a family recipe and probably unchanged for hundreds of years. Near zero fat and low salt. It's of typical mediterranean diet origin as are many of the things I am familiar with.

I can also offer a vegetable soup, an Italian bread, a great pizza, chicken cacciatore, grilled and baked fish, etc. so stay tuned for mine. Let's see your low fat and low salt recipes, please.

My girlfriend is huge into Crossfit excersize and a Paleo Diet. Now that we live together, I've joined her in eating Paleo. It's just been a week and a half, but after seven days, I lost five pounds. I'll weigh myself again on Sunday morning.

Basically, no sugar, processed foods, bread, beans or potatoes. We eat all day long. Meat, nuts, fruit and veggies. Bacon is a favorite, but so is beef and chicken. Check out the websites if you want to give it a try. I think it's the easiest diet ever because you eat all the time!!!

I'm really enjoying it Brandi. Last night we had eggs mixed with chopped up beef patties and onions and a big pile of bacon on the side!!!! How great is a diet that you get to eat bacon? :)

Here's my starting contribution. It's spagetti sauce that can double as pizza sauce on the homemade dough I'll get to in a few days.


For this sauce I start with these canned San Marzano tomatoes from Italy. It's a big #10 size can and has only a small amount of added salt.

I start with a frying pan and one teaspoon of good olive oil. Add a couple cloves of chopped garlic and warm it up a little. You can get by without the oil.

The above has more garlic that most should use. Now you can dice some onion and warm it a bit or add some dried onion flakes to the tomatoes later. I went with dried onion for this since I was in a hurry. Now dice up some tomatoes, or just squeeze them in your hand and toss in the frying pan. I cover the pan with a dish since it holds the heat better. Don't cook, just warm up. Also add 1/2 tsp red pepper flakes and 3/4 tsp dried basil. Some add a little sugar or a little red wine. Some add a little oregano. Also, fresh basil added at the end is better than dried basil.

Just warm up the pan till it's hot and toss in some whole grain spagetti. That's a lesson by itself of types, grains, etc. Toss the spagetti for a moment, put the dihs back on top for a minute and then slide ono your serving dish. That's it and virtually no salt, near zero fat and it's an excellent part of a balanced meal. you can add some string beans, applesauce and maybe a pice of baked cod. What's wrong with that?

Let me add that until you start earing right again, salt and fat taste pretty good and things with a lack of salt and fat not so good. If you slugged down a Papa Johns meat lovers special for lunch and washed it down with two slices of banana cream pie, my dish ain't so hot. On the other hand, if you skipped breakfast and lunch, this dish is just what the doctor ordered.
The dish could easily be dolled up with a piece of chicken sausage (2 grams of fat--- get at Costco) and it adds to the taste and still qualifies as low and low.

My wife keeps an herb garden. It is really nice cooking with fresh herbs compared to dried.
