I came across this and found it interesting. I have spotted a few "hondas" in this area of NC. (Honda means "main rice field" in Japanese, toyota means "bountiful rice field")

That is interesting. I travel to China on Biz a few times a year over last 10 years. First time last year my wife an I took a 2 week vacation in the back country. One of the nicest places was a mountain area terraced in to rice fields. Hard to imagine a steep hillside with hundreds of "steps" 6 to 10 feet wide filled with water. We stayed in a small hotel with 5 rooms in the fields. In the days we hiked along the terraces. The location was 50 mi North of Guilin

The fields were maintained by a lot of people and water buffalo

That is really cool. I remember seeing some smaller fields nestled in the mountains in Japan but nothing like that. Here's a little video I took from the train with some typical fields visible.
