Sassafraspete\'s pork butt saga
OK, getting ready for the wild New Years Eve party. My Bro-and Sister -in-law and 2 boys are coming over and of course my 79 yr old mother-in-law. We usually break out some wine, but usually the cheap stuff for the MIL. The party is usually pretty wild, with my bro-in-law and I falling asleep and snoring somewhere around 10 PM. If lucky, our better halfs wake us up just in time to put on a party hat and blow the thing-a-ma-jig. We usually call another bro-in-law and give him a group "toot" on the thing-a-ma-jigs. And about those kisses...well maybe from the family dog.
Anyhow, to get ready for the wild party....I thought I'd smoke a couple of pork butts. I don't know why they call them butts when they are in the shoulder. Anyhow, I was going to do prime rib on the smoker, until I priced it ....and then I just couldn't picture my bro-in-law pigging out on that high priced meat...so ended up dragging home these butts...at a substantially lower cost. I figure we'll have some pulled pork BBQ sandwiches.
I thought I would take a few pictures of the process, but unfortunately ....I accidentily deleted the first ones I took. Anyhow, here's what's going on at my house today.....
First step, split some hickory wood and fire the smoker grill up.
