Kerr,

How about this ta get ya started. Add some frosty cool ones and you'll be set./w3tcompact/icons/smile.gif

Fried Trout (For 2 pounds of rainbow trout fillets)
1 t. salt
1/8 t. pepper
1 egg
1 t. milk
1 c. flour (or 1/2 c. flour & 1/2 c. cornmeal)

Sprinkle fillets or whole trout inside and out with salt and pepper. Beat egg and blend in milk. Dip fish in egg/milk mixture and roll in flour or flour/cormeal mix. Place fish in frying pan with 1/8 inch cooking oil. Cook on moderate heat until golden brown on both sides. Cooking time: 10 minutes depending on thickness of fish.

c. = cup
t = teaspoon
T = tablespoon

Man, get that frying pan ready.

Kerr, my wife prefers all her fish cooked one way; roll'em in a flour/cornmeal combination and deep fry'em. As for me, I like'em that way, as well as baked, broiled, or grilled with a little lemon butter and dash of salt. In fact, I'll eat'em just about anyway, except as sushi./w3tcompact/icons/laugh.gif

Golden Dipt Beer Batter Mix. That's the brand name. Mix it up, deep fry it in vegatable oil until it floats. Turn it and brown it for about another 2 minutes. Yum!!!

kerr,
Trout are not good eating fish. What you need to do is place them in one of those vacuum packers, pop them in the freezer for a couple of days and then put them in a styrofoam box and ship them "overnight express" to the address in my profile.

Ramps???? Lets see, there's on ramps, off ramps, boat ramps,

"Ramps; related to wild leeks, are perhaps the best known of all edible
wild plants in West Virginia. This herb is found in great abundance in
many of the mountainous counties from April to June, although in some
areas it is rapidly becoming scarce."

Hillbilly, this here yankee didn't have a clue./w3tcompact/icons/laugh.gif

Kerr, know about as much on smokin fish as I know about them ramps.

Anyhow here's another recipe. One for baked rainbow trout fillets:

Italian bread crumbs
seasonings (salt, pepper, garlic, and/or lemon pepper)

Preheat oven to 350 degrees. Place fillets in baking dish or pan, fillet side up (skin side down). Season to taste (salt, pepper, garlic, and/or lemon pepper). Liberally sprinkle Italian bread crumbs over the fillets to completely cover the fillets. Bake uncovered for 25 minutes or until the fish flakes easily with a fork. The bread crumbs will turn light brown.

Have a good one! /w3tcompact/icons/smile.gif
