What do you use to maintain them?
A guy told me to use tongue oil but I read the side of the bottle and it said do not ingest. Someone else said olive oil but won't it go rancid?

We no longer have a wooden cutting board, but when we did, I treated it with cottonseed oil. Incidentally, I now use only cottonseed oil for deep frying. I buy it at Bass Pro.

Chefs use mineral oil on their wooden cutting boards.

I sell wooden utensils that I carve. I use flax seed oil. Its one of the few non-nut oils that will polymerize giving a long lasting protection.
grape seed oil will also work. I will use mineral oil and beeswax (aka spoonbutter) as a final top coat to add a polish, but it is no longer my only means of protecting the wood.
Olive oil (veggy oils), yes go rancid, mineral oil can wash out it never really "sets" it basically hugs the surface.
Pure Tung oil people use, but most is mixed with something else.
