I have a 2007 X300 and found the following thread:

The above thread was interesting and followed my owners manual; which doesn’t look like my mower deck.

Should I use the AM136872 “chess piece” to set the level on the mower deck and then set the Scalp Wheels to control the tip of the deck? If so, what height do I set the scalp wheels.

I have an X300 with a 42 inch deck, JD recommends the mower height should be 2.75 inches, scalp wheels should be 3/8 inches from the ground. I use the gauge that comes with the mower to set the height. Not sure why your deck won’t stay level, maybe some loose hardware on the carriage that supports the deck. Possibly uneven tire pressure ?

As bmg88201 suggests, anti-scalp wheels should be 3/8" higher than set height.
But..
1st.. air the tires to same right and left.
2nd.. raise the scalp wheels clear up temporarily.
3rd.. set mower to preferred height (I do 2-1/2").
4th.. adjust blade tips to 2-1/2" left and right (I use a wood block cut to that length).
5th.. adjust front blade tip to 1/4" lower than the right and left setting.
Set the anti-scalp wheels to 3/8" inch above flat surface as near as possible.

Repeat as necessary to learn what is moving and not staying set to fix anything failing to stay adjusted.
