I just bought the 6" model two weeks ago and have not used it yet.
Have you even seen it yet? 6 inches is awfully small
Sorry, I couldn't resist.

Would you recommend just removing them? (I'm buying the Caroni 6-footer this week or weekend)
I have left mine on ...
I have left mine on but honestly the only thing they have ever done is snagged brush and gotten bent. I suppose that in theory they protect the edges of the mower when you set it down, especially if you leave it on the ground for storage but a couple of 2x4s would work as well.
I don't know what answer to give you but would point out that Caroni considers them an option. AgriSupply simply orders all their mowers from Caroni with that option.
This afternoon I noticed that the main roller came partially out of the cup on one end - dropped about 3/4 of an inch, but it still spins. I'm sure its held in by whatever remains of the bearing. I'll make a call to Agri Supply in the morning, but anyone seen this happen?
About the rear roller:
is the fitting rotating with the roller like the old JD flails or is it an end bearing?

My dad is planning to try swapping out the straight OEM zerk fitting for an angled one. I'll report back if it fits/ works. He likes the roller set at the height that puts it directly in front of the zerk fitting.
